Fried chicken with cashew nuts and dried chili
Ingredients
- 6 – 8 chicken breast halves skinned, boned
- ½ cup roasted cashew nuts
- 5 – 7 dried chili cut into small pieces
- 3 onion dried
- ½ cup chopped celery stalk
- 3 tablespoons nampla (fish sauce)
- 4 – 6 oil for deep – fry
Method:
1. Cut chicken crosswise ½ inch. In a wok heat oil, fry the dried chili until crisp.
2. Remove the dried chili and stir in onion and celery stalks. Stir – fry for 2 minutes.
3. Add chicken, nampla, and oyster sauce and stir – fry for 2 more minutes.
4. Place on a serveing plate. Top with roasted cashew nuts and dried chili.
5. Garnish with green onion and chili.
